plantain foufou Prepartion for 4 people.
Ingredients for the Fufu:
12 ripe plantains(slightly ripe, not too soft)
Water (enough for boiling)
Instructions for the Fufu:
Prepare the Plantains: Peel and cut the plantains into large chunks.
Cook the Plantains: In a large pot, cover the plantain pieces with water and bring them to a boil over medium heat. Let them cook for 20 to 30 minutes or until tender.
Mash the Plantains: Once the plantains are cooked, drain them and mash them using a mortar and pestle to create a smooth, even dough.
Add a little salt and red palm oil, then mix everything together. Shape into balls and set them aside on plates.
Preparation of the Clear Sauce for Fufu
Ingredients:
Three tomatoes
4 large eggplants, cut into large cubes
Smoked fish or pre-cooked smoked meat, or shrimp (depending on your choice)
Cablè leaves (aromatic leaves)
Salt
Spices of your choice
A small amount of red palm oil
Diced onion
Chili pepper, to taste
Water
Instructions:
Prepare the base:
Place a pot with a small amount of water on the stove. Add the proteins of your choice, such as smoked fish or pre-cooked smoked meat.Add onions and seasoning:
Chop the onions and add them to the pot, along with some salt. Let everything simmer on low heat for 20 minutes to allow the flavors to blend.Add water and vegetables:
After 20 minutes, pour in enough water to cover the proteins. Then, add the cubed eggplants, fresh tomatoes, and fresh or dried chili peppers, depending on your preference.Boil and season:
Cover the pot and let it boil for 25 minutes, allowing the vegetables and proteins to cook through. Check the seasoning and adjust if necessary.Serve:
Once cooked, remove the pot from the heat and serve hot. This dish is best enjoyed with plantain fufu.
